We select our raw materials carefully and with rigorous quality controls.
Most of our meats come exclusively from homologated slaughterhouses, working with bovine and porcine livestock, from the region of Galicia. This region is well known for its quality meats, having the Origin Denomination TERNERA GALLEGA DE CALIDAD . The company Intends to work with these suppliers for as long as market conditions allow it.
To keep an exemplary traceability of our products, the company has developed a program called Hazard Analysis and Critical Points Assessment Program (Programa de Autocontrol de Peligros y Puntos Críticos, APPC). We have done so with the help of experts in the field as well as with the collaboration of the local Sanitary Regulating Body. The protocol was approved by the Consejeria de Sanidad de la Junta de Galicia. (Health Department Regional Government).
The raw materials and finished goods are constantly analyzed by the Food Products Investigation Centre of the University of Santiago de Compostela (Centro de Investigación de Productos Alimentarios de la Facultad de Farmacia de La Universidad de Santiago de Compostela), Which is one of the few homologated and recognized labs for these type of controls in Spain.
